About Carol

Carol has been the St Mark Hot Lunch Coordinator since 2017. She plans the hot lunch menus, shops for the groceries, and prepares the meals for our weekly hot lunch. She is grateful for the help and support of parents to help serve the meals, and has enjoyed getting to know many of our school families this way.  The staff and students are very supportive, and make the hot lunch program very rewarding to her!  It is a joy to see the kids each week and try to brighten their day with a nutritious and tasty lunch! She is not afraid to wear a silly hat or costume to make hot lunch more fun!

Carol is originally from Bloomer, Wisconsin, and later graduated from UW Stout, with a degree in Dietetics. She worked as a Registered Dietitian for 12 years in clinical, community, consulting, and corporate nutrition settings.  Then she was blessed to be a stay at home Mom to her son and a daughter, who attended St Mark as students from preschool-grade 8. She and her husband, Darren, enjoy serving in many ways at St Mark, and are blessed to be members of the congregation for over 17 years.

Carol's hobbies are family time, board games, singing, spending time outdoors, and anything related to homemaking and natural living.

"It is a blessing to serve in the loving Christian environment of St Mark. I  never thought that I would be a "hot lunch lady," but God is able to use us in many surprising ways to grow us, and to be able to love and serve our neighbors!"
